Ellen’s Exotic Spicy Barbecue Sauce

2 tablespoons olive oil
1 Spanish onion, chopped finely
5 cloves garlic, chopped finely
1 tablespoon grated ginger root
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg
One 15-16 oz can plum tomatoes with juice
1/2 cup brown sugar
3 tablespoons tamarind paste (available at gourmet markets)
1 jalapeno pepper, chopped finely
2 ounces cilantro, chopped coarsely
Salt
Ground black pepper

Heat olive oil in large saucepan over medium high heat; add onion and garlic and cook until almost soft. Add the ginger root and cook two minutes. Your whole kitchen will be filled with a wonderful aroma!

Add the additional spices and cook an additional 20 minutes. Add tomatoes and juice, brown sugar, tamarind paste and jalapeno, stirring to combine.

Cook, stirring occasionally, until desired thickness, about 30 minutes.

Asian Barbecue Sauce – (Makes about 2 cups)

When making barbecue sauce for a pork roast, be sure to try this Asian favorite:

1 tablespoon toasted sesame oil
1 cup chopped onion
2 teaspoons minced garlic
1-1/2 cups water
1 cup catsup
2 tablespoons brown sugar
2 tablespoons cider vinegar
2 tablespoons Worcestershire sauce
1-1/2 teaspoons chili powder
1 teaspoon paprika
1/2 teaspoon red hot pepper sauce

Heat oil in large saucepan over medium heat. Add the onion and garlic. Cook for about four minutes, stirring frequently, until the onion looks translucent.

Add the remaining sauce ingredients. Bring to a boil over medium high heat, then reduce heat and simmer for 30 minutes, stirring often.

Place the mixture in a blender or a food processor and blend of process until of a smooth consistency.

Refrigerate or freeze the sauce until ready to use, if not using right away.

Every Barbeque Sauce Recipe Includes 3 Ingredients

1/4 cup water

In a large saucepan, combine all the above ingredients and simmer over medium-low heat for about an hour. If not using the sauce immediately after preparation, cover it and store in refrigerator. This recipe keeps well for several months in freezer containers.

Quick and Easy Barbeque Sauce – (Makes just over 2/3 cup)

A barbecue sauce recipe that is very good while also easy to make is one that involves mixing different substances or liquids that need very little preparation other than opening a jar or bottle.

The cooking time for this barbeque sauce recipe is only four to five minutes.

1 clove garlic, crushed
1/2 teaspoon salt
2 tablespoons honey (preferably orange or clover)
2 tablespoons white vinegar
2 tablespoons soy sauce
3 tablespoons sherry
1 tablespoon hoi sin sauce

Combine all the above ingredients in a small saucepan and bring a boil, stirring constantly. Reduce heat and simmer, continuing to stir for 2-3 minutes.

This sauce is great on meats or sandwiches.
